“Glucose Goddess”, the “goddess of glucose”. This is the name of the French mathematician and biochemist Jessie Inchauspé, the 31-year-old woman who conquered the world with her book The Glucose Revolution, translated into more than 20 languages, in which she talks about the effects of glucose on health. She became a guru of social networks with more than 2 million followers on Instagram who claim her method to “flatten the blood sugar curve”, and in these latitudes there are many celebrities who swear by her, among them neither more nor less. than Jimena Baron. Yes, yes, the very Cobra, that she usually shares on her Instagram how those tips of hers changed her body.
The accident that changed the life of Jessie Inchauspé and the birth of 2the goddess of glucose”
Behind the glucose influencer is a young woman who suffered a serious accident when she was 19 years old. She was on vacation in Hawaii with a group of friends and they had the bad idea to jump off a waterfall. She fell badly, suffered serious damage to her vertebrae and underwent surgery. Although she recovered, she was left with sequelae.
“After breaking my back, I started to develop physical problems, but also psychological ones, such as depression, panic attacks and anxiety. It was really bad, I couldn’t stay alone,” Jessie Inchauspé told TN.

For the young woman who grew up in the affluent neighborhoods of Paris, the accident was a revelation: “I realized that if you don’t have health, you don’t have anything.” After earning a BA in mathematics in London and then an MS in biochemistry in Washington to “better understand her body,” she Jessie set sail for Silicon Valley, where she worked for five years at a genetic research company, 23andme.

In 2018, his employer launched a new project around glucose sensors, small devices that are attached to the upper arm and that record our glycemia, that is, the level of sugar in our blood, at regular intervals and that often used by diabetic patients. They wanted to do a study open to non-diabetics and Inchauspé immediately signed up. That coincidence changed his life.
“Glucose is our body’s main source of energy. But the issue is its dosage. I realized that the more glucose spikes I had, the worse I felt psychologically. For me it was a real find because for 10 years he has been asking me how to make myself feel better. This helped me rebuild my health and then I wanted to share my findings and so the IG account was born,” said Inchauspé.
The Frenchwoman, who now lives in the US, began reviewing hundreds of scientific studies on nutrition and glycemia and, armed with a glucose sensor, became her own guinea pig. As she told TN, she believes that therein lies the key to her success. On her GI account, she posts graphs with her blood glucose curves after eating different foods “to easily show the results of scientific studies.”

“It is a very powerful educational tool,” explained the scientist and skilful communicator, who posts in three languages on her account (English, French and Spanish) and has become a regular on dozens of podcasts.
What is a blood sugar spike?
According to Inchauspé, a study conducted in the United States revealed that 90% of non-diabetics have spikes in blood sugar every day, without knowing it.
“Glucose spikes are rapid and intense increases in blood sugar levels after a meal and although moderate increases are normal, large increases cause quite a few problems from inflammation, accelerated aging, impact on hormones and the state mood, sleep and our long-term health,” he explained.
Hence his idea, which some scientists and doctors criticize: try to always maintain a blood glucose curve that is as stable as possible.
“In order to feel better, have fewer cravings, have a clearer brain and, in the long term, prevent or slow the development of type 2 diabetes and heart disease, reduce the risk of cancer and the risk of Alzheimer’s, we have to Learn to control your blood sugar level and smooth out the curves. It is something very simple and powerful that we can do for our health”, he maintained.

The keys to the method of Jessie Inchauspé, the Glucose Goddess
The success of his first book was such that he has just published a second, The Glucose Revolution: The Method. Inchauspé emphasizes that his is not a diet, but a method to improve health.
According to the influencer, there are four great rules to follow to get results in a matter of days. Some of them are well-known tricks, but that her popularizing talents helped to spread. “The idea is to learn how and when to eat things that contain glucose to enjoy the most and affect health as little as possible,” she summarized.

The first rule will probably not sit well with the militants of the croissant and the breakfast with bills: “have something salty for breakfast instead of sweet, because when we have something sweet for breakfast, we create a great glucose spike first thing in the morning (since the beginning of the morning). day) and that will deregulate our glycemia for the whole day and generate a glycemic roller coaster that will put us in a situation of cravings and addiction to sugar ”.
“Breakfast is super important to build it with proteins and fats, without anything sweet, except whole fruits if you want. This allows us to regulate ourselves and feel much better”, said Inchauspé.
The second rule has to do with respecting a certain order when eating. “It is very important to start lunch and dinner with an entry based on vegetables because they contain fibers that will line our intestines and reduce the speed with which the glucose molecules from the rest of the food would reach the bloodstream. We can continue eating what we like, but by starting the meal with a starter with vegetables, we will be able to reduce the glycemic peak and its physical and mental impact”.

In this sense, Inchauspé recommends leaving your cravings for dessert, because its impact will be less than if you eat it as a snack between meals. According to him, an article published in 2015 by Cornell University in the United States “shows that if we eat the elements of a meal in a specific order, we reduce the general glucose spike by 73% and the associated insulin spike by a 48%”.
The third trick may not be to everyone’s liking either: consume vinegar. “A tablespoon of vinegar in a large glass of water or tea, some pickles or a small mocktail before eating something rich in carbohydrates, for example foods rich in starch or sugar, can reduce the glucose spike by up to 30% because acetic acid slows down the rate at which starchy foods and sugars are converted to glucose in the body. So it’s a good way to eat everything you like with less impact on blood sugar,” he said.
The fourth hack of the goddess of glucose is a well-known medical recommendation, but little applied in a world marked by the plague of sedentary lifestyle: do a little exercise. “When possible, about 10 minutes of walking or light activity after a meal allows the muscles to absorb any excess glucose that would otherwise have created a big spike.”
“These are the big principles of stable blood glucose,” Jessie said. Biochemistry maintains that rather than depriving yourself or prohibiting some food groups, you have to “learn some simple tricks that are easy to apply in a lasting way, that do not require drastic changes.” “For me these tips that are backed by science are like fairies that help you live normally, but feel much better.”
Jessie Inchauspé: ”We can reprogram our body through the way we eat”
More and more studies speak of our intestines as a “second brain” and make it clear that the function of our digestive system goes far beyond simply processing food. For this reason, the Glucose Goddess is convinced that “we can reprogram our body through the way we eat.”
Jessie Inchauspé assures that with her method the changes are noticeable in a couple of days. (Photo: courtesy Jessie Inchauspé).
“Food is really one of the most important pillars of being in good shape. The way we eat has a profound impact on our cells, our brain, our hormones, our inflammation, our physical and mental health; so with minimal changes to our diet, we can reprogram our bodies and have a very profound and positive impact on our health,” he insisted.
Inchauspé assures that whoever follows his advice will feel the benefits “immediately”. “Especially if you were always used to having a sweet breakfast and you switch to a salty breakfast. Most people start to notice the impact and benefits within a single day,” he said.
