Step 1: To make the pizza buns, dissolve the yeast in a glass with a tablespoon of warm water and half a teaspoon of sugar. Mix the flour, semolina and the rest of the sugar in a bowl, and add the yeast, warm water and olive oil. Knead until you get a homogeneous dough, add the salt and continue kneading. Separate into two buns. Paint them with olive oil and leave them in two bowls covered with plastic wrap. Reserve them in the refrigerator for three days.

Step 2: To prepare the sauce, put the olive oil and butter in a pot or frying pan over medium heat. Add the garlic, oregano, ground chili, onion and season. Then add the tomatoes mixed in their juice, the basil and the sugar. Bring to a boil, reduce to low and cook for an hour. Let cool.
Step 3: When forming the two very large New York-style pizzas, stretch the dough with a rolling pin to achieve the roundest shape possible. Cover with tomato sauce, leaving the edges free, add the mozzarella and cook in a hot oven for ten minutes.

Step 4: For the final touch, remove from the oven, spread the mozzarella and place the thin slices of pepperoni until the entire surface is covered. Bake another 5 minutes… and that's it!
